Does anyone else think this week is just flying by?!
I can’t believe it’s Wednesday already…

I’m loving being at home now (my teaching job/school year ended), and I’m knocking things off my to-do list like a champ.  It’s technically summer for me!  Now only if the weather would cooperate…We’ve had cool, cloudy, rainy days for over a week straight now…

It feels so great to be moved on from that job, though I can’t help but feel a little anxious about the future.  Now that I have some time off though, I’m doing some research on potential jobs/employers/roles I want to pursue to figure out how to do this little dream of mine.  It gets frustrating not knowing where to start or how to go about it, especially when I’m still fairly new to the area and don’t know off hand all of the different options here….It’s a work in progress though and I’m doing my best to just research a lot and trust that I’ll figure out what I’m meant to do!

Aaaaand we’re done talking serious life issues…let’s just talk food ;)

the following is my food journal from Tuesday, May 28th

breakfast

breakfast

2 eggs (cooked overhard) + a slice of homemade oatmeal molasses bread (toasted and topped with peanut butter and cinnamon) + strawberries + a banana

lunch

quinoa + brown rice + black beans + corn + bell peppers + evoo + cumin + cilantro + avocado + salsa + corn chips

afternoon snack

mid-afternoon I snacked on my last ALT Larabar – Cinnamon Apple Crisp – my favorite ALT of the four.

dinner

a simple meal…
another slice of the homemade bread, toasted and topped with chunky sunflower seed butter (I’m obsessed with this stuff right now), cinnamon, and honey
+ a smoothie!
spinach, kale, chard, avocado, cucumber (new addition – legit!), frozen mango chunks, frozen raspberries, ground flaxseed, ACV, cold water, and orange juice

After we got home from our softball game I made myself a little “healthified” dessert.  It looks like ice cream doesn’t it?
Plain Greek coconut milk yogurt + peanut butter + unsweetened coconut shreds + cocoa nibs

I’m really going to have to try the ALT bars, I LOVE larabars and go through a case of them a week I feel like but I love the thought of added protein! Going to go check the store out later and see if I can find them!

My “healthy” dessert is pretty similar to yours. I use greek yogurt in place of ice cream and usually put berries and a little chocolate on it.

As far as I know they’re in stores, but if not you can find them on Amazon.com
I will say that I don’t love the ingredient list nearly as much as the original Larabars. But, if I *need* a protein bar for a quick on-the-go type of snack, I’d still choose the ALT bars :)

We still have two weeks left! Counting down… :) I am/will be moving this summer, and starting a BUNCH of work for my PhD! CRAZY to think about. I hope I get some traveling in, too.

The sunflower seed butter is the “sunbutter” brand – I’ve just never had the chunky kind before and it is SO much better than the creamy. Crazy addicing…as if I needed another nut/seed butter to be addicted to…

The homemade oatmeal molasses bread is my grandmother’s recipe…I should get her permission to share it here. It’s delicious and I love making our own bread :)

My healthified dessert doesn’t exist lol Low cal fudgesicle?! Lol I haven’t tried ALT bars but really want to! Are they in stores yet? I am a teacher and reading, but because I don’t have a full time job, my summer consists of working some more :( Not fun. I hope you find our your dream job when God has the plan for you :) Until then, take in the relaxing time you have!

I believe ALT bars are in stores, but if not, you can find them on amazon.com

I’m an environmental educator so my season REALLY picks up in the summer!! It’s fun though, because we’re outside and that’s when all the fun animals come out!

What new field are you hoping to get into? No matter what: good for you for following your dreams! Ironically, my work year is just getting ready to start (hopefully!) – I’ve been just focusing on school but now, after my move (one week away!) I need to get back to work… fingers crossed I can find something fun that I like :)

It is a great feeling!! And makes me feel more relaxed – I get stressed easily when I have a million things to do and they’re running through my mind :)
