Does anyone else think this week is just flying by?!
I can’t believe it’s Wednesday already…
I’m loving being at home now (my teaching job/school year ended), and I’m knocking things off my to-do list like a champ. It’s technically summer for me! Now only if the weather would cooperate…We’ve had cool, cloudy, rainy days for over a week straight now…
It feels so great to be moved on from that job, though I can’t help but feel a little anxious about the future. Now that I have some time off though, I’m doing some research on potential jobs/employers/roles I want to pursue to figure out how to do this little dream of mine. It gets frustrating not knowing where to start or how to go about it, especially when I’m still fairly new to the area and don’t know off hand all of the different options here….It’s a work in progress though and I’m doing my best to just research a lot and trust that I’ll figure out what I’m meant to do!
Aaaaand we’re done talking serious life issues…let’s just talk food ;)

the following is my food journal from Tuesday, May 28th
2 eggs (cooked overhard) + a slice of homemade oatmeal molasses bread (toasted and topped with peanut butter and cinnamon) + strawberries + a banana
one of my favorite meals!
quinoa + brown rice + black beans + corn + bell peppers + evoo + cumin + cilantro + avocado + salsa + corn chips
mid-afternoon I snacked on my last ALT Larabar – Cinnamon Apple Crisp – my favorite ALT of the four.
a simple meal…
another slice of the homemade bread, toasted and topped with chunky sunflower seed butter (I’m obsessed with this stuff right now), cinnamon, and honey
+ a smoothie!
spinach, kale, chard, avocado, cucumber (new addition – legit!), frozen mango chunks, frozen raspberries, ground flaxseed, ACV, cold water, and orange juice
After we got home from our softball game I made myself a little “healthified” dessert. It looks like ice cream doesn’t it?
Plain Greek coconut milk yogurt + peanut butter + unsweetened coconut shreds + cocoa nibs
