Even though the weather is colder, I never really phase out smoothies, any time of the year. Now they’re just perfect for post-workout meals ;)
pumpkin oats for breakfast are a norm once again
Zucchini Chocolate Chip Bread (paleo)
this bread is so good! I may or may not have eaten the entire thing on my own over the span of just a few days…
I seriously almost stabbed myself when I cut up this spaghetti squash…it’s no joke!
I decided to use the squash’s seeds too….I tossed them in a little olive oil, sprinkled them with sea salt and cinnamon, and roasted them in the oven for 15(ish) minutes – they turned out really well! awesome for healthy snacking.
I can’t get enough of this lunch…
spaghetti squash, sliced tomato, black beans, lentils, marinara sauce, pesto, and seasonings (garlic powder, sea salt, oregano, and Italian seasoning)
all heated up in the toaster oven.
I’d highly recommend this combination!
homemade veggie, bean, and millet soup!
the dinner that I was looking forward to for days:
three-bean veggie burgers in romaine lettuce wraps
plus sweet potato fries and ketchup
I picked these up at Whole Foods last weekend (because they were on sale and I was intrigued)…verdict = pretty good, but I like the black bean ones better.
the best treat from the past week was definitely this breakfast from Friday…
homemade apple cinnamon rolls!
