We {finally} set up our Christmas tree last night!
It looks pretty good! I do think it needs some tinsel/garland yet though, but I love how cozy it makes our home feel.

Jen shared a preview of next month’s button and I’m really excited to see what I can come up with in December. I still have that healthy apple pie in the works, plus I’ve been creating some other new recipes lately (sugar-free cookies, granola, and more). Should be fun! :)
*the following is my food journal from Tuesday, November 27th*
breakfast
7:30 a.m.
toasted whole-wheat bagel topped with cinnamon, almond butter, and chia seeds + a banana
workout
9:30 a.m.

between walking to warm-up and cool-down, I got in a nice 4-mile run
lunch
11:15 a.m.
a green smoothie topped with that homemade granola I was telling you about…
the smoothie included fresh spinach, frozen mango chunks, 1/2 frozen banana, 1/2 avocado, apple cider vinegar, ground flaxseed, 3/4 scoop vanilla protein powder, and enough orange juice to get it mixing together
I then had a square of this dark chocolate before getting back to work.
afternoon snack
3:15 p.m.
an Almond Cashew with Flax + Omega-3 KIND bar (love these)
dinner
5:30 p.m.
baked lemon pepper chicken and sweet potato fries with ketchup, plus some fresh green beans on the side
dessert
8:30 p.m.
I decided to make Stuft Mama‘s new recipe for a Healthy Apple Microwave Muffin.
It may look a little weird (or that’s what I thought at least, plus this was my first time making a microwave muffin), but it tasted really good!
I ended up topping it with a little chocolate PB2, which definitely wasn’t a bad idea.

I’ve never made a microwave muffin, but I’ve always been curious about the ones on Chocolate Covered Katie’s site. Was it chewy?

It was soft I guess, more like melt-in-your-mouth than really chewy, if that makes sense :)
I love microwave muffins. So quick and simple. But mine always end up a strange shape due to the mug I use hehe. Your tree looks beautiful. Hopefully putting ours up soon!
haha I used a giant mug because I was afraid it would overflow or something otherwise :)
Tina at Carrots N Cake has a recipe for a microwave english muffin! I haven’t tried it yet but I plan too! It looks so yummy! Pretty tree btw!

Thank you for sharing the microwave muffin recipe! I’m going to have to try this one. I have made protein microwave cupcakes a couple times before and they end up with the consistency of a stress ball! Thanks again for sharing this, I will be making it soon!

I’m sorry none of your cupcakes have turned out! That comment about the stress ball made me laugh though :) You should try this one out, it’s soft and has a melt-in-your-mouth type of texture.

That’s exactly how I feel! I *need* to get more decorations yet too–besides our tree and some cute Christmasy table settings, our home doesn’t look too festive :)

I’m glad you tried stuft mamas new apple protein muffin. I was wondering how it tasted before I gave it a try. I guess now I’ll have too :)
it’s good! I didn’t love it plain but with just a little pb2 (or any nut butter probably) made it great!
How did you like the chocolate pb2?
That was my first time trying it, and on that muffin it was really good! I mixed it with water that time…
I’ll have to try it with applesauce sometime and let you know what I think…nothing beats real peanut butter though :)
I LOVE Christmas so my tree has been up since before Thanksgiving, haha :) Love your smoothie with granola! I have been really into protein smoothies for breakfast recently, especially ones with spinach!
me too! It’s so true that you can’t taste the spinach…I used to be one of those people that thought there was no way you couldn’t taste it but now I have to smile when I hear others say that :) can’t knock it til you try it!
