WIAW #45: operation clean out the fridge

Jesse and I will be doing some traveling over the next 4 days, going different directions for a while even, then one of us will be home before the other.  I didn’t do a normal grocery shopping trip this week because of that, and right now we’re making a point of eating up all of the things that could go bad while we’re gone, which is mostly fruits and veggies (wasted food = wasted money!).

*the following is my food diary from Tuesday, November 20th*

breakfast

6:45 a.m.

2 slices of organic whole-wheat toast topped with almond butter, pumpkin butter, cinnamon, chia seeds, and banana slices, plus the remainder of the banana on the side with a little more almond butter

workout

8:00 a.m.

5-minute warm-up Walk
5-mile Run (42:49)
5-minute Walk
20 minutes of Elliptical intervals

post-workout snack

9:45 a.m.

about 1 – 1 1/2 cups unsweetened applesauce with PB2 and cinnamon

lunch

11:00 a.m.

Smoothie:
-2 large handfuls fresh spinach
-1/2 frozen banana
-frozen strawberries (about 8)
-2 peeled kiwis
-about 1 tbsp. apple cider vinegar
-1 tbpn. ground flaxeed
-orange juice (not from concentrate—enough to make the smoothie mix)

topped with raw sliced almonds and some Bear Naked Fit vanilla granola

afternoon snack

3:30 p.m.

some of these kale chips from TJ’s (these things are delicious)

+ a Peanut Butter Cookie Larabar from my surprise holiday survival kit

dinner

7:00 p.m.

Salad Beast:
-romaine
-carrot
-tomato
-chicken
-walnuts
-a little rance
*all organic

dessert

8:30 p.m.

After doing some baking for Thanksgiving get-togethers, I had a couple cookies (monster cookies with Reese’s pieces).

Yum! I could sure go for a “Salad Beast” right about now! :) As for cooking/baking, I made a sweet potato pie & carob squash pudding for me the other day, but those are about gone lol. Today I am making over my mom’s broccoli casserole recipe, prepping our cornbread stuffing (baking it tomorrow morning) and making my husband’s pecan pie! :)

I actually hate applesauce unless it’s mixed with cinnamon and pb2. Have a great holiday week/weekend girl! <3

Oh I’m exactly the same way, I absolutely HATE wasting food! I’m the queen of scraping off the mold and eating it anyway, haha. Usually, when I have to clean out the fridge, I throw all of my perishable vegetable into salad, stir fry with homemade peanut sauce or salad :)
