day’s eats: 3.6.13 … so excited to sleep!

After we were both done with work today, Jesse and I met up at Target to do a little shopping (it’s basically on the way home for us both).  Along with getting the things we needed, we made the (unplanned) decision to buy a mattress topper:

I’ve never been so excited to go to sleep in my life.  I laid down on the thing after we set it up this evening and didn’t want to get back up.  And as soon as this post publishes, that’s right where I’m headed!

Today’s Eats:

breakfast

cereal combo breakfast bowl

cereal combo bowl:
shredded wheat + brown rice puffs + cinnamon + chia seeds + hemp seeds + raw pepitas + raw cashews + pomegranate arils + a banana + unsweetened vanilla almond milk

lunch

sandwich carrots apple lunch

a pretty stereotypical brown bag lunch:
a sandwich (2 slices of honey whole wheat with almond butter and cinnamon, half also with a little grape jelly) + 3 sliced carrots + an apple

afternoon snack

ginger chew larabar uber roasted nut roll snack

a ginger chew + a Larabar uber Roasted Nut Roll snack bar
*I think I hit my quota of nut consumption for the day at this point.  #whoops
**that was not meant to be dirty in any way. #hadtosayit

dinner

Mexi-Bowl HEALTHY dinner

This Mexi-bowl was seriously good.

layers from the top down:
avocado
fresh tomato
sauteed veggies (onion, zucchini, green pepper, sweet corn, black beans, evoo, black pepper, sea salt, cumin)
mozzarella cheese
quinoa

homemade sweet potato fries

I also had some sweet potato fries with ketchup.  I was actually baking them to be brought for meals tomorrow, but they smelled way too good to resist so I had to have a few.

Do you have a mattress topper or a really nice mattress?!
this was our alternative to getting a new mattress ;)

I’ve heard a lot about the bento boxes lately!! They look great. And this should probably embarrass me or something haha, but my first thought when I saw them was “could I even fit all the food I eat into one of those boxes?!” :)

Definitely a cost-effective way to improve your bed! We try and flip our mattress as regularly as we can but it’s never enough!

Matress toppers are the BEST!!! I love sleeping on mine everynight; feels like I am sleeping on a cloud :) Mexican food? Most definitely yes!
