day’s eats: 2.4.13

Yoga
6:00a.m.

I started my day off with some yoga.  If you follow me on Instagram (@danica_ipnp) you saw this picture of my cool at-home yoga studio ;)  I was tired and it was early, but I knew I would feel best of I just got moving, so I did.

meal #1
7:00a.m.

breakfast overnight oats

overnight oats
put together last night:
1/2 cup oats + chia seeds + shelled hemp seeds + cinnamon + ginger + unsweetened vanilla almond milk
added this morning:
unsweetened vanilla almond milk + cinnamon + a banana + pomegranate arils + a kiwi + pecans + almond butter

meal #2
11:45a.m.

lunch soup crackers carrots

a bowl of leftover homemade veggie stew + 12-grain crackers + carrots

meal #3
3:30p.m.

snack peanut butter on toast with apple

a slice of Ezekiel bread with peanut butter and an apple

Run
4:30p.m.

After work I went to the gym for a bit…
I walked for 5 minutes to warm-up, then ran 5 miles.
Mile 1: jog/warm-up
Mile 2: sprint/jog intervals
Mile 3: jog with incline intervals
Mile 4: sprint/jog intervals
Mile 5: increasing speed (range from 6.8 – 10.0)
Then I walked for another 15 minutes before heading home.
At home I did 10 minutes of core work and called it a night!

dinner shrimp fajitas

shrimp fajitas!
2 corn tortillas topped with a little shredded cheese, sauteed veggies (red and yellow bell pepper, onion, black beans, black pepper, evoo, cumin), shrimp, and fresh tomato = delish.

I tried a new-to-me fruit tonight too–a Minneola
Apparently it’s a type of tangerine, a cross breed of some sort.
It was good!

Chalk that up to the first new-to-me fruit of the year!

What was the last new-to-you fruit or veggie you tried?  
Did you like it right away?

Was today a little rough for anyone else?
I’m glad to be home relaxing tonight (watching BL!)

I have seen minneolas in the grocery store and have been curious about them. I am glad to hear that they are tasty. I will have to give them a try the next time that I see them :).

They’re just a tiny bit chewier/tougher than regular oranges (the white part at least), but not a huge difference and definitely good!

I really do love the way yoga makes me feel :). It’s the best thing for those runner hips! You had a great day of eats! In not a fan of shrimp, but those fajitas look amazing!

Yes! I make sure I do yoga 1-2 times a week (at least) when I’m training for a half or my hips get tight really really easy. The difference it makes is amazing!
p.s. you could try making those fajitas without shrimp or with a difference kind of meat if you were interested! :)

I wish I could be a morning workout-er, but I just can’t. Night is the way to go, for me! As for fruits…..hmm….I tried Kale a few weeks ago in a salad, and really enjoyed it! It was salty, and extra flavorful. Yesterday wasn’t rough, but whew-wee I’m nervous about today!

That’s okay not to work out in the morning, the best time to workout out is any consistent time each day! #fact ;)

I just bought some Minneolas tonight! I’ve had them before though. :) Latest ‘new to me’ veggie was probably lotus root awhile ago…

I have NO idea what a lotus root is… :-/ I just cooked with eggplant for the first time this past weekend. I can’t believe I hadn’t before! so good.
