day’s eats 2.19.13

Hi friends…how was your day?!  Mine flew by, and I love that it’s already Wednesday tomorrow (work-wise, at least)…my boss also gave me chocolate today for doing something she referred to as “impressive.”  That’s never a bad thing I suppose ;)

On an unrelated note, did you hear about this??  Um, GLASS??!?  Just another reason to buy whole foods more often than not, I suppose.  Scary.

Alright, let’s take a look at today’s food journal:

breakfast

breakfast almond butter banana toats

honey whole-wheat toast topped with almond butter, cinnamon, chia seeds, and banana slices + banana with almond butter + a homemade apple cider donut

lunch

green smoothie lunch

a green smoothie topped with pepitas and granola + an egg (cooked in the microwave. classy.)
in the smoothie: spinach, kale, chard, 1/2 avocado, frozen mango chunks, frozen banana, acv, ground flaxseed, wheat germ, OJ, ice cubes

afternoon snack

apple snack

an apple!
(I spy some boots…snapped a pic while at work)

dinner

salad

first I had a salad — greens, chickpeas, carrots, and caesar dressing

roasted potatoes

then I had a roasted potato (and a half), mashed, topped with Earth Balance, sea salt, and black pepper

dessert

dessert brownie, ice cream, peanut butter

I was craving dessert tonight, so I went for it!
I had a leftover homemade brownie from Valentine’s Day (frozen, thawed) with a scoop of peanut butter and some (dairy-free) vanilla ice cream.
SO good.

What’s your favorite way to cook eggs?

*I prefer over-hard via stovetop, but I’m fine with the scrambled microwave version, especially if I’m in a hurry.

What was your workout today?  And what do you have planned for tomorrow?

*I did an easy-paced 4-mile run this morning, plus some walking before and after….Tomorrow is a REST day for me.  I can tell my body needs it!

Tha apple cider donut sounds so yummy! You can’t go wrong with chocolate + PB + ice cream – great dessert choice! ;)

I’m a scrambled egg girl, all the way. You’re dessert? = good choice :)

The smoothie bowl looks so vibrantly green! Mine never turn out that way. Was it the kale, spinach, avocado, or just the fact that they were all mixed together?

I either prefer my eggs scrambled or made into an omelet… which man an omelet sounds good right about now :)

I really like eggs when they are part of an omelet….or just scrambled! Today for my work out I did 2.5 miles on the treadmill, and will be doing 30 mins of cross training tomorrow (just started training for a 10k)

I love runny eggs and toast or omelettes with the whole produce aisle inside of them;) My workout today was Jillian Michaels yoga meltdown part one and two and it felt amazing. Those donuts look great and I need to make them now.

I really love to add some spinach to an omelet! Love eggs! Oh and that dessert looks amazing. :)

Mmm love your varied breakfast!
My favourite eggs are scrambled I think, with someting interesting in them like tuna or salmon.
Today’s my rest day, 5 mile run planned for tomorrow! :)
