Hi friends…how was your day?! Mine flew by, and I love that it’s already Wednesday tomorrow (work-wise, at least)…my boss also gave me chocolate today for doing something she referred to as “impressive.” That’s never a bad thing I suppose ;)
On an unrelated note, did you hear about this?? Um, GLASS??!? Just another reason to buy whole foods more often than not, I suppose. Scary.
Alright, let’s take a look at today’s food journal:
a green smoothie topped with pepitas and granola + an egg (cooked in the microwave. classy.)
in the smoothie: spinach, kale, chard, 1/2 avocado, frozen mango chunks, frozen banana, acv, ground flaxseed, wheat germ, OJ, ice cubes
(I spy some boots…snapped a pic while at work)
first I had a salad — greens, chickpeas, carrots, and caesar dressing
then I had a roasted potato (and a half), mashed, topped with Earth Balance, sea salt, and black pepper
I was craving dessert tonight, so I went for it!
I had a leftover homemade brownie from Valentine’s Day (frozen, thawed) with a scoop of peanut butter and some (dairy-free) vanilla ice cream.
What’s your favorite way to cook eggs?
*I prefer over-hard via stovetop, but I’m fine with the scrambled microwave version, especially if I’m in a hurry.
What was your workout today? And what do you have planned for tomorrow?
*I did an easy-paced 4-mile run this morning, plus some walking before and after….Tomorrow is a REST day for me. I can tell my body needs it!
