day’s eats: 2.11.13

workout
6:00a.m.

35 minutes of Yoga (Jillian Michaels’ Yoga Meltdown Video, level 1)
followed by a Cardio + Abs Workout (<–it’ll be posted later this week!)

meal #1
7:00a.m.

breakfast oats with berries and pepitas

overnight oats!
In the mix: old-fashioned oats + unsweetened coconut milk + chia seeds + cinnamon + ginger + pumpin puree + mixed berries + pepitas + almond butter

meal #2
12:00p.m.

a bowl of randomness…looks terrible, but really tasted good (I feel like I say that all the time, but I promise it’s true :)
wild rice + sweet potato fries + lentils + mixed veggies (green beans, carrots, corn, peas) + evoo + cumin + black pepper

meal #3
3:30p.m.

snack yogurt granola banana

a banana + granola + vanilla coconut milk yogurt*
*this is the last time I’ll be buying/eating this yogurt…I’ve been paying close attention to the labels on my dairy-replacement type foods lately (milks, yogurts) and both this yogurt and the TJ’s coconut milk have Carrageenan in them :(  boo.

6:30p.m.

*while prepping dinner I snacked on a few peanut m’n'ms (unpictured)

homemade pizza

homemade pizza!  (garbage bread for J, pizza for me :)

homemade crust…3/4 of it was topped with: marinara sauce, mozz. cheese, spinach, kale, lentils, tomatoes, and fresh cilantro
the other 1/4 was topped with: pesto, mozz. cheese, spinach, kale, tomatoes, and fresh cilantro

Actually, I think that Meal #2 looks quite delicious, not terrible! Bowls of randomness can be SO good!

And that pizza?? YUM!

I should look closer on things that’s for sure. I do on some things, but there are a few that I just won’t budge. I drink fat free creamer in my coffee every morning and I know it’s probably horrible for me, but I don’t like the taste of almond milk or regular milk in my coffee. I did pick up some coconut creamer the other day and I am going to give that a try!

YUM! That breakfast looks awesome, I love combining all sorts of things in oatmeal to start the day. I’m also obsessed with Jillian’s yoga meltdown–you’ve inspired me to break that out again soon!
