day’s eats: 1.31.13

Hi friends, I hope you all had a good day!  I love that today is the last day of January and that tomorrow is Friday!  Weekend?  Yes, please!!

Here’s a look at today’s eats:

a leftover homemade pumpkin cinnamon waffle toasted and topped with almond butter, cinnamon, and chia seeds

the last leftover homemade pumpkin cinnamon waffle, toasted, topped with Earth Balance, nutritional yeast, and an egg
plus a green smoothie: spinach, frozen mango chunks, 1/2 frozen banana, apple cider vinegar, ground flaxseed, wheat germ, orange juice

meal #3
12:00p.m.

lunch

leftover lentil veggie mac & cheese (with extra lentils and black beans) and some carrots on the side

3:45p.m.

apple slices

an apple (not exactly a “meal,” but you know what I mean ;)

6:00p.m.

veggie stew - slow cooker

a bowl of homemade veggie stew (it cooked all day in the slow cooker–I love coming home from work to dinner already made and the house smelling delicious)

8:00p.m.

homemade banana soft serve

I was craving dessert (and peanut butter), and though I was freezing, I couldn’t get my mind off of banana soft serve, so I went for it…
homemade banana soft serve (1.5 frozen bananas, unsweetened vanilla almond milk, a little vanilla protein powder, vanilla extract, cinnamon)
topped with granola, dark chocolate chips, and a gigantic scoop of peanut butter!

it was amazing.

Do you get food cravings often?

I definitely get cravings often, and usually it’s for something totally random.

I get cravings all the time for the most random things! My last one was for veggie sticks from Trader Joe’s, so weird.

Today I had a coffee ice cream craving that was so intense I literally got in the car and drove all the way to the grocery store just to buy two of those mini containers of Hagan Daas. (Good thing the store’s so far away or, after I polished those two off, I totally would’ve gone back for more LOL) :)

Your meals look really good. I love your soft serve pudding!
I’ve got such a craving for salted nuts at the moment. I could probably polish off a whole bag they’re so moreish! I jut can’t buy then as I have no restraint!

I love that we crave things! I recently cut processed sugar from my diet and I feel so much better! Before then, I could burry my head in a bowl of cookie dough and feel zero shame. :)
I am craving soups lately. Love the stew Danica!

I ALWAYS have cravings. Normally it’s for chocolate (think Chocolate Chips. Those are the BEST THING EVER), but really any sweet treat gets me crave-y. I’m pretty sure my last craving was for cereal. So of course, I made myself a bowl of Cheerios. I liek how you space out your meals into about 6 a day, and make the portions smaller. I’d really like to try that, however it’s a bit more challenging when your still in school. I think it would be worth a shot though!

I always say that people who don’t know me would constantly be suspicious that I’m pregnant because of my crazy cravings. It usually ends up with very odd food pairings. :)

And ice cream–or in this case, banana soft serve–knows no season! Good for you for giving in…in such a delicious way.

That stew looks fabulous. I finally have a slow cooker, but have yet to take advantage of it!
