day’s eats: 1.29.13

Compared to yesterday, today felt much more balanced in terms of my diet.  I definitely had more veggies, more healthy carbs (I think I had too few of those yesterday), and some fruits in there too.  I also avoided the dessert craving I had this afternoon, and that’s always a win for me.

meal #1
6:00a.m.

breakfast waffles and yogurt

2 leftover homemade cinnamon pumpkin waffles….1 topped with Earth Balance and an egg + 1 topped with peanut butter, cinnamon, and chia seeds.
I also had a vanilla coconut milk yogurt with pomegranate arils on top (<–I’ve been obsessed with pom. arils lately)

11:00a.m.

a toasted veggie wrap: whole-wheat tortilla, hummus, spinach, tons of black beans, romain lettuce, pickles, tomato, and mozzarella cheese
boiled carrots with honey
and a (gigantic) banana

meal #3
3:30p.m.

snack naked juice and popcorn

 popcorn and an orange carrot Naked juice

meal #4
6:45p.m.

lentil veggie mac & cheese dinner

Lentil Veggie Mac & Cheese …so good!  I had another helping too, about half the size of the first.  yum.

We went to the mariachi, not very healthy but very tasty! W celebrated Melindas birthday early

I had spaghetti, broccoli and cheddar biscuits! So good!

Great deal of meals. I can’t get over how delicious your breakfast looks. Pumpkin Waffes… YUM!

OMGosh I have got to try that lentil mac & cheese. I am a huge fan of both lentils and mac & cheese, so that dish HAS to be good. Thanks so much for sharing :)!!

I had BBQ pork and some roasted almonds, random! I say both, depending on who I’m with or what comes out of my mouth. Texans say dinner but I’m used to saying supper.

You are good about ‘changing it up.’ I don’t post what I eat every day because it really is just the same thing…but maybe with slightly different toppings, or a different lunch soup from one day to the next. [Of course, on IG, no holds barred. Y'all can see 1,000 bowls of oatmeal with blueberries for all I care. :)]

Thanks! Just like with my workouts, I have to change it up or I get so bored and sick of what I’m having/doing :)
