Coconut Almond Granola {recipe}

Coconut Almond Granola
makes four 1/4-cup servings 


  • 1 cup old-fashioned oats
  • 1 tbsp. flax seeds (ground or whole)
  • 1 tbsp. unsweetened coconut shreds
  • 1/4 cup sliced almonds
  • 2 tbsp. coconut oil (melted)
  • 1 tbsp. honey


1. Preheat the oven to 325*F.

2. In a medium-size mixing bowl, stir together the oats, flax seeds, coconut, and almonds.  Add in your melted coconut oil and honey, stirring until all of the dry ingredients are covered with the wet.

3.  Pour out onto a greased baking sheet and spread out evenly.

4.  Bake for 12 minutes, stirring halfway through.

5.  Remove from oven, transfer to a plate to allow for cooling.

6.  Enjoy!

Yum! I love the ease of this recipe AND I can have all the ingredients! Yay!

I made up a batch of granola today & it was SO GOOD! I enjoyed a big bowl with blueberries & flax milk. The only changes I made were chia instead of flax & maple syrup instead of honey. I also added a sprinkle (ok, ok, more like a pour) of cinnamon because I’m addicted ;)

I am looking forward to trying out different flavor combinations soon! Thank you, thank you! :)

Yay! So glad you liked it :) And yes, I love that about granola! Every time I make it I change it up a bit, but at least this recipe gives everyone a platform :)

I’ll see what I can do :) I’d love to bake A LOT of things, but it’s going to be a challenge with all of the traveling we’re doing!

Yum! I love making my own granola! My favorite is a chocolate chip peanut butter granola but this sounds delicious! Anything with coconut is a win for me!

My husband & I are heading out on a cross-country move this week, so I made up another batch of this yummy granola for the drive! I kept everything the same as before, except this time I subbed sunflower seeds for the almonds, used a LOT more coconut & added vanilla! It’s in the oven now & smells fantastic!
