Whole-Wheat Blueberry Banana Bread Recipe

To make your weekend just a little bit sweeter…

Whole-Wheat Blueberry Banana Bread


  • 1 1/2 cups whole-wheat flour
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon chia seeds
  • 1 tablespoon ground flaxseeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large bananas (mashed)
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened vanilla almond milk
  • 1 cup fresh blueberries


1. Preheat the oven to 350°F and spray a 9×13 loaf pan.

2. Combine all of the dry ingredients (flour – nutmeg) in a large mixing bowl and stir together.

3. Add in the wet ingredients (banana – milk) and mix until combined.

4. Fold in the blueberries.

5.  Pour the batter into the baking pan, and bake for 60-65 minutes, or until a toothpick comes out of the center clean.

6. Enjoy!

*I encourage you to use as many organic products as possible, especially the blueberries!
**feel free to change it up!  use all chia seeds and no flaxseeds, or use dairy milk instead of almond, etc.
***It’s great on its own (and not too sweet!) but it’s also delicious with a little peanut butter, apple butter, or fruit preserves spread on top.

Feeling Better + New Core Workout

This morning was the first time in over a week that I woke up headache-free!  Yay!  That immediately made my day start off on the right foot.

I went out for a 3-mile run followed by a 10-minute cool-down walk this morning.  I left the house at 8:30 and it was already nearly 80 degrees and extremely muggy.  The run was good though despite the humidity.
When I got home I followed up my cardio with the below core workout and some good stretching.

WIAW #27: Summertime Fresh Fruit

Good morning friends!

I hope you’re all doing well today…I haven’t been feeling well at all this week (crazy bad headaches–the ones that literally make my temples throb–and an on and off sore throat. bleh)…Honestly, the only time my headaches go away is when I’m doing some sort of exercise, so it at least hasn’t hindered my workouts.  I just scheduled a 30-minute massage for Saturday afternoon and I’m hoping that’ll fix some of the gigantic knots in my upper back which will then relieve my headaches.  Crossing my fingers–it’s worked in the past!

It’s been a while since I’ve joined in on the WIAW party, and this month Peas and Crayons is focusing on SENSIBLE SNACKING.

I’m definitely ‘a snacker’ and choosing healthy (sensible) snacks is important to having a healthy diet.

Below is my food journal from Monday, June 25th…let’s take a look at What I Ate:


Jesse and I went to the gym first thing in the morning…post-workout I had a glass of apple juice (not from concentrate, no sugar added) and some watermelon.


Later in the morning I had a big bowl of fresh fruit–a banana, raspberries, and strawberries (fresh fruit is one of my absolute favorite parts of summer!)


For lunch I made a roasted veggie sandwich (in love with these lately) that contained 2 slices of organic multigrain bread, 1 spread with avocado and 1 spread with tomato basil hummus, filled with cucumber slices, organic romaine lettuce, locally grown tomato slices, organic spinach leaves, and pickles.  On the side I had some edamame, organic baby carrots, and organic celery, all of which I dipped in more tomato basil hummus.


In the afternoon I decided to have a little *mug* of cereal…Kashi shredded wheat, cinnamon, unsweetened vanilla almond milk, and a scoop of organic crunchy peanut butter.  It didn’t exactly photograph well so I just decided to show you the cute mug I ate it out of :)


Dinner was delicious!  Jesse used our new grill (thanks again J&M!) to cook a couple turkey burgers, which we ate on whole-wheat sandwich thins and dressed up with organic romaine lettuce, pickles, and organic ketchup.   As side dishes, I baked some homemade french fries (from organic red potatoes) and a salad that consisted of organic romaine lettuce, butter lettuce, and cabbage, sunflower seeds, cucumber slices, and organic ranch dressing (organic doesn’t mean this dressing is healthy, but sometimes that’s just the kind of dressing that I want :)

After our softball game I just snacked on one of those individual/half cup-sized applesauces (no sugar added!) and a few organic raisins.

A day of eats I’m proud of :)

What’s your favorite fresh fruit to eat during the summer?!

If I had to pick I’d say strawberries and raspberries, but it’s really really hard to pick–I love fruit in the summertime!.

…because it might make a difference.

As many of you know, I ran my first half marathon at the end of May, and that was something I used to think was impossible for me to ever do.  If you go to that post you can read all about what crossing that finish line meant to me, and maybe, just maybe, it can inspire you to go after one of your goals, too.

New Upper Body Workout: 3-Set Success

Jesse and I are officially members of a healthy living center in our new town!  It’s an absolutely fantastic facility with a low membership fee (that lowers even more based on the number of times we visit) and a ton of fitness classes each week that are included in the membership fee!

Cleeeearly I’m excited about it.

We’ve decided that, for now at least, we’re going to go together on Monday, Wednesday, and Friday mornings before J has to head to work.

That means yesterday morning was our first time using the facility, and because of that and the time constraint (we weren’t sure how long the drive/parking/etc. would take so I decided not to try and time it right for a class), I didn’t get to a fitness class yet…though I hopefully will later this morning!  Instead I did some cardio and the below upper body strength training workout.  It’s nothing crazy inventive, but it’s effective!

What are you workout plans for today?

a wedding and a baby

You know what’s pretty silly?  The number of people who, literally the day after you get married, start questioning you about when you’ll have babies and ask “Are you pregnant?!” any time you say you have a stomachache or don’t feel quite right.

We got married just two weeks ago, and more than five people have already asked me these things.  So here I am to just say that as completely and utterly excited I am to have babies with my new husband, we’re not planning on venturing down that road anytime too soon.  We want to enjoy a couple of years together and get a start on financially preparing for that next “big thing” (as best as we can anyway)!  For now I’ll just have to get my baby fix holding our godson and my new cousin :)


This past weekend I both attended a wedding and held a newborn baby!  Two of my favorite things.

On Saturday, J and I attended our friends’ wedding.  The bride was a close friend of mine growing up and we played softball with the couple the summer after high school.  It was so great to be a part of their day.

The ceremony was beautiful…really everything about the entire wedding day was beautiful though!

I feel like the ball has started rolling on our age group getting married now…The fun thing about that is J and I get to just sit back and enjoy them all and we get to see and catch up with friends we grew up with but don’t get to see often anymore.

On Sunday, after breakfast with J’s family, we walked over to my aunt and uncle’s house to meet my new cousin!

Friday Focus: Back in the Groove (motivation needed)

Yesterday I spoke a little about how I’m working to get back into the regular routine of eating well and exercising regularly.  I’ve done well this week now that we’re back at home (kind of a safe haven for eating clean and working out, for me at least), but it’s definitely not easy.  It’s a little ridiculous how much taking a week and a half off can really hinder my workouts, I’m actually really surprised, has this happen to anyone else?

Well anyway, since this week is all about regaining focus on taking care of my health, I thought I’d share a few of the pictures, articles, quotes, etc. that I’ve been using to motivate my hard work and a positive attitude.  Enjoy!

where to start…

Good morning!!

Well I’ve definitely been absent from the blog for a while…I was a little distracted for most of that time but I’m starting to really miss blogging now so I’m happy to be back!

It’s hard to know where to start.  You could say that a lot has happened around here in the past few weeks.

I’ve decided to wait to do my wedding recaps until I get the pictures back from the photographer, so those posts will come as soon as I can get pictures organized (and obviously I can’t wait to see them!!).

For today, I thought we could just catch up on a few things other than all that wedding mumbo-jumbo :)

  • We’re in our new home now and working on unpacking, not just our things that we brought from our old apartment but all of our wedding gifts as well.  It’s a slow process but we’re continuing to just love this place. It’ll be so fun to repaint, decorate, and add furniture to it over the course of this next year.  (I’ll eventually show some before and after pictures too!)
  • I have a new baby cousin!  Ian was born on Tuesday and I get to meet him this weekend!  For those of you who don’t know me at all should know that I absolutely love babies (<–this is possibly the understatement of the century).  Anything and everything baby related = love.  Jesse and I already went shopping for Ian’s gift :)

    I can hardly stand to just look at this adorableness…can’t wait to hold him!!

  • Does anyone know how to preserve wedding flowers/bouquets?  I may have forgotten to let mine hang upside down while we were on our honeymoon (the only way I know how to preserve them) and instead left it in its water vase.  This is what they look like right now:

    just dried up….any suggestions?
  • I’d like to wish a huge congratulations to my aunt Kari who ran another marathon this past weekend and got an amazing PR… 3:43!!!  simply amazing…so proud of you!

  • While on our honeymoon, working out and eating clean/healthy foods definitely took a backseat.  I’m not saying I regret that necessarily because you only get to take that trip once, but working out again now this week definitely sucks after time off and eating fairly crappy.
