WIAW #9: San Antonio Edition

What I Ate Wednesday: a day in San Antonio!

**the following eats are from Tuesday, December 13th

Breakfast:
8:30a.m.

1/2 cup Old-Fashioned Oats cooked in 1 cup water…add-ins: unsweetened vanilla almond milk, cinnamon, peanut butter + a Banana

Lunch:
12:00p.m.

3-cheese and tomato slice grilled cheese sandwich + a pickle + an apple
(this was my first time photographing my food in a restaurant, and even though no one seemed to notice, I felt super awkward about it)

Snacks:
3:00p.m.

I split this gigantic dark chocolate cup with peanut butter filling with Jesse (really though, I ate at least 75% of it)

6:15p.m.

Supper:
8:00p.m.

At Green Vegetarian Cuisine (highly recommend this if you’re ever in the San Antonio area)

Jesse and I first shared some sweet potato fries (with ketchup and 2 other vegan sauces that were so good)

I ordered the Quinoa Burrito (“Quinoa, beans, avocado, spinach, tomato, sprouts, and raw pecan hummus in a whole wheat tortilla”)…unfortunately I really didn’t like it, probably due to the hummus, and only ended up eating some of one half…

with a side of fruit salad (deeeelicious)

The restaurant had a baking class going on somewhere else in the building and after we were finished with our meals a woman offered us a free graham cracker pecan cookie, and you know I didn’t deny her offer!  Jesse had a a couple bites but I enjoyed most of it, and boy it was good.

Later that night we all went to a nice restaurant overlooking the city and I nibbled on a few bites of sorbetini plus had the big chunk of crust of a strawberry cheesecake slice.  I tried taking pictures in there but the lighting was no bueno.

Overall an okay day, considering I’m on vacation.  Yep, I just used that excuse…Really though, I just love trying new restaurants and on vacation is the best time to do that!

This afternoon I wanted to share with you a great post that I read this past weekend from Lindsay at In Sweetness and In Health.  Lindsay wrote about how to calculate calories for maintaining a healthy weight.  I found her post very informative and actually did the math to figure out how many calories I should be consuming each day (less than 2100, if you’re wondering, which I’m sure you’re not :).  I don’t count calories right now, but I plan to (starting soon), for the next 6 months or so.  You can probably figure out what for…Anyway, I thought it would be a good source for anyone interested and just had to share!
**please remember though that the kinds of food you’re eating is (in my opinion) more important than the calories of the food–aka go for wholesome foods rather than those 100-calorie bars made with chemicals, preservatives, and who knows what else.

It’s our last night in San Antonio already! :(  In about an hour, Emily and I are heading out for a run and then we’re all going out for supper at a vegetarian restaurant called “Green Vegetarian Cuisine.”  I’m (probably) way too excited about it.

I’m hoping everyone is having a good week so far.  Can you believe Christmas is only 11 days away?!   Remember not to stress out about the holiday season and to turn your focus to what it’s really about — the birth of our Savior Jesus Christ.  God has blessed us all with so much, and this is the time to truly reflect on those blessings and share our girts, talents, and love with one another.
