slice of Nature’s Pride whole-wheat toast topped with about 2 tablespoons of Sunbutter’s sunflower seed butter, chia seeds, cinnamon, and honey

homemade rutabaga fries (seasoned with salt, pepper, and chili powder) with ketchup for dipping


1 La Tortilla Factory whole-wheat high-fiber tortilla with skippy natural chunky pb, honey, and a sprinkle of cinnamon + celery dipped in the same kind of pb


a cup of dark sweet cherries


10 (yes 10!) 8-oz. servings of water

Lemon Zucchini Muffins

About a week ago I picked up two huge zucchini squash from the local farmer’s market.  They were each just 50 cents, which is a fantastic deal in comparison to average grocery store prices.  I’ve learned how to cook them on the stovetop, which turns out pretty delicious, but since J doesn’t really like zucchini I had to get a little creative with how I would use up all of it before it went bad.  And besides, I’m not one to turn down the opportunity to bake a new recipe!  I still have quite a bit left too so I’m thinking maybe zucchini bread bread will be made yet this week?

After doing a little foodie blog searching, I came across this recipe.  It has quite a few ingredients, but none of them are by any means things I didn’t already have in my kitchen.  The original recipe did call for lemon zest though, and with no unsliced lemon around, I decided to just add a little more lemon juice in its place.

Each muffin is nice and dense, has a great flavor, and this is all around a wonderful recipe.

Lemon Zucchini Muffins

**recipe from fANNEtastic food

makes 12 muffins

3/4 cup white all-purpose flour
3/4 cup whole-wheat flour
1/2 cup sugar
1/2 cup chopped walnuts
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened applesauce
1 cup shredded zucchini
1/4 cup unsweetened vanilla almond milk
2 1/2 tablespoons lemon juice


  • Preheat the oven to 350 degrees.
  • Either place paper baking liners in your muffin pan or spray the pan to avoid sticking.
  • Mix together the dry ingredients first (flours, sugar, walnuts, cinnamon, nutmeg, baking powder, soda, and salt).
  • Add the wet ingredients to the dry mix (applesauce, zucchini, milk, and lemon juice).
  • Once the ingredients are all combined, spoon that mixture into your baking pan filling 12 muffin cups.
  • Sprinkle the top of each muffin with a few uncooked oats.
  • Bake for about 25 minutes, or until the center of each muffin is thoroughly baked.

Lately I’ve been having 2 recurring dreams.  The first is just weird, and the second is, well, scary.

Recurring Dream #1:

I “wake up,” look in the mirror, and my front two teeth are separated like they were when I was a kid!  I mean, there’s a HUGE gap like I never even had braces!

I’ve been having this dream at least once a week now for nearly 2 months, and it’s making me super paranoid!

Recurring Dream #2:

In this dream, or nightmare rather, I’m so sick and tired of having headaches I decide to go to the doctor and get an x-ray of some sort of my head.  Jesse and I go to the hospital together, I spend the entire morning getting pictures of my head taken, and then we wait in the waiting room for hours.  When we finally get to hear about the results, we walk into a room filled with sad looking doctors, nurses, and my entire family.  The doctor tells me I have a brain tumor, which has been causing my frequent headaches and sensitive eyesight, and that I have less than a year to live.  I immediately start crying, and that’s when I always wake up.

I get headaches a lot, my eyes really are extremely sensitive to bright lights, and each time I have this dream (maybe twice a week for a month now?!), I wake up in the biggest panic and immediately start praying about my nightmare.
What in the world kind of dream is this?!?  Horrible, right?

There’s only one other dream I remember having more than once in my life and that was in elementary/middle school when I would dream that I my school would become my house.  Yeah, I would live in it!  Play in the gym each afternoon, make supper down in the cafeteria with my family at night, and sleep in my bedroom, which was my old 2nd grade classroom.  This dream would sometimes come in a grocery store version–I would instead be stuck in the grocery store overnight because I somehow stayed past closing hours, and my friend and I would end up running around eating all the food I wanted until the store opened the next morning!
Straaaange dreams, but those didn’t come true, so hopefully the ones I’m having now won’t?!

What I Ate (on) Wednesday #5

3 slices of mini loaf banana bread with butter

9:45 a.m.
Cherry Pie Larabar + banana (ended up adding about a tablespoon worth of peanut butter too, not pictured)


12:15 p.m.
slice of whole-wheat bread with a slice of low-sodium deli turkey + 5 baby dill pickles (I forgot to take a picture of this…oops!)

but, I did get my camera out for lunch’s dessert–3 banana oatmeal chocolate chip cookies with unsweetened vanilla almond milk

3:15 p.m.
While nannying in the afternoon I enjoyed this tasty wonder:

(I chose this instead of my typical afternoon snack since I wasn’t very hungry, and yes, I definitely felt too old to be drinking it)


5:15 p.m.
quesadilla + organic blue corn chips + all-natural chunky salsa

to make the quesadilla I first heated up black beans and chopped onions in a small pan…

in a larger skillet I placed a La Tortilla Factory whole-wheat tortilla (these have awesome nutrition facts for a tortilla), mozzarella & sharp cheddar cheese, a diced up roma tomato, and the heated black beans and onions…

and once it was thoroughly heated and melty I enjoyed it alongside the salsa and chips! (by the way, if you’ve never tried blue corn chips you absolutely should–they’re so good–I don’t know how I’ll ever like “regular” chips again)


Post-workout Snack:

I read recently that you can enjoy as many sweets and treats as you want as long as you cook and bake them yourself…not sure that’s so true or even a good idea at all since I love to cook and bake…but I’m considering posting that in my kitchen as a reminder to help myself. :)

I’ve created a few great recipes so far this week, but a couple of weeks ago I tried making a spanish rice type of meal based off of nothing other than what I figured would go well together, and it was a total fail.  For whatever reason Jesse still ate it and said it wasn’t “too bad.”  I felt bad he even had to come up with that lie.

Banana Oatmeal Chocolate Chip Cookies

Good morning!  Apparently we had some very ripe bananas to use up this past weekend, plus I had a case of the baking bug.  I made 2 mini loafs of banana bread on Monday and Sunday afternoon I made these goodies.  Hope you have a great day!

Banana Oatmeal Chocolate Chip Cookies

(makes about 25 cookies)

**recipe from Sweet Tooth, Sweet Life


  • 2 tablespoons softened butter
  • 1/4 cup cane sugar
  • 1/2 cup light brown sugar
  • 2 medium-sized ripe bananas; mashed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup white all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 3/4 cup dark chocolate morsels


  • Preheat the oven to 350 degrees and spray a baking sheet with cooking spray (I used EVOO).
  • Beat together the butter, sugars, bananas, egg, and vanilla.
  • Add the flours, baking powder, soda, and salt–beat until combined.
  • Mix in the oats and chocolate.
  • Spoon the dough onto your baking sheet (mine were each about 2 tablespoons).
  • Bake for about 12 minutes, or until each cookie is set and lightly brown on the edges.  Let the cookies sit on the baking sheet for 5 minutes before moving them to a cooling rack.
